You don't need to be terrified, a little practice and you will be fine. I would recomend that you start with canning high sugar/ high acid foods such as fruits, jams , jellys. These are the safest things for beginners. also, buy the book " fresh girls guide to easy canning and preserving ". This book comes with a free video that will help you.

I purchased a "beginners" canning kit from Walmart and ordered two books (used) from Amazon - both are beginners guides, the Ball Blue book and a Canning for Dummies type of book. I'm trying to eliminate processed sugar from my diet - tough task but it's necessary since sugar is so toxic - so I don't think anything high sugar would work for me. How about applesauce? The recipe seems very simple.

apple sauce will work as a starter project. Do consider that the natural sugars in fruit are different than the highly processed sugars available in the stores. You can also try tomato products as a starter project.
